With the air full of spring anticipation, INEO – the fine-dining restaurant inside the five-star Anantara Palazzo Naiadi Rome Hotel – reopens its kitchen: this culinary return comes with new tasting menus that celebrate innovation, tradition and fusion, guided by the creative vision of Executive Chef Heros De Agostinis.

INEO thus becomes a crossroads of culinary emotions, a place where the fusion of flavours is a universal language that celebrates taste and humanity. New for this season, the “Around the World” tasting menu reflects this philosophy, including vegetarian creations and allergen-free dishes to meet the needs of a public increasingly attentive to quality, sustainability and personalised gastronomic experiences.

Chef Heros is inspired by Italian traditions, his Eritrean origins and the international influences he has accumulated over 25 years cooking in the world’s most prestigious starred restaurants. “Each dish is a journey that starts from the Italian markets, crosses exotic landscapes and returns to my childhood,” explains the chef. With an innate curiosity and sensitivity towards seasonality, De Agostinis combines flavours, techniques and aromas, giving life to dishes that tell stories of encounters and syntheses. “I like to transform a humble ingredient into a protagonist, intertwining personal memories and cultural discovery,” he says.

The “Around the World” tasting menu is a celebration of cultural contamination in the kitchen, inspired by the philosophy of Anthony Bourdain, whom Chef Heros De Agostinis deeply admires. The title comes from a book given to him in 2022, which inspired the idea of combining local flavours and memories of his international experiences. The dishes feature Italian raw materials blended with global techniques.

Among the most representative creations is the tuna served with seasonal beetroot and a Japanese yuzu sauce, offering a perfect balance of freshness, sweetness and acidity. The veal sweetbread, with Roman puntarelle, pink grapefruit and ají amarillo, pay tribute to the Roman tradition, enriched with South American spices for a unique contrast of flavours. Finally, the Spaghetti 2.0, a fusion of pad thai and Neapolitan macaroni omelette, symbolising Heros’ culinary philosophy, where distant traditions blend in harmony. Redesigned for INEO’s reopening, the Around the World menu includes vegetarian and allergen-free dishes, demonstrating the restaurant’s commitment to an increasingly inclusive and contemporary offer.

Among the allergy-safe creations are the spaghetti cacio e pepe with raw prawns and lime – a tribute to Chef Heros’ mentor Heinz Beck – and classic dishes with international influences, such as the homemade ravioli muhammara and seafood with chef’s baharat mix and the black cod, Vietnamese anchovy sauce with creamed potatoes, which reflect the global philosophy of chef Heros De Agostinis. Among the vegetarian proposals, the celeriac risotto style with fried artichoke and black truffle is an elegant reinterpretation of an Italian classic, while the finely sliced cauliflower, pumpkin and clementine puree, truffle dressing combines bright colours and flavours, representing the seasonality and creativity of the chef.

In an intimate dining room seating just 28, service at INEO is managed by restaurant manager Damiano Verdone and a cellar boasting over 900 labels is selected by sommelier Federico Spagnolo. The reopening of INEO marks a new delicious chapter for Roman fine dining.
