The exciting flavor journey at Granbaita Gourmet Restaurant
Drawing on autumnal inspirations, Andrea Moccia presents his creations at the refined Granbaita Gourmet, the hotel’s fine dining restaurant, which also welcomes external guests. The restaurant offers a true culinary journey, featuring highly creative dishes in the Tasting Menus. These dishes are the result of extensive research and a skillful, almost alchemical blend of traditional alpine flavors with the finest international offerings, from Wagyu beef to lobster.
Guests can choose between the Gherdeina (5 courses) and Dolomites (6 courses) menus, or enjoy the Chef’s Surprise Menu, a freeform symphony of flavors. Among the offerings are Tatre (South Tyrolean beef tartare wth dark bread, arugula, mountain cheese, mustard and honey, cucumber and gin), Pigeon (breast, thigh, and ragout of pigeon with Jerusalem artichoke, foie gras, coconut, rhubarb, and hyssop), Mold (risotto with chanterelles, fermented apricot, hazelnut, yeast, lichens), Alpinus (char, anchovies, crème fraîche, tarragon, barley broth, miso, and katsuobushi), and Belly (tuna belly with tonnato sauce, mango, eggplant, and black rice; veal belly with celeriac, morels, truffle, and green pepper). For dessert there is, Mistake (white chocolate, almond, apricot and fennel) and Heu (hay milk panna cotta with tonka bean, strawberries and passion fruit).
